It comes from the simultaneous milling of different varieties of olives, carefully selected and harvested at the right degree of ripeness directly from the'tree. Characterized by a golden yellow color with green hues, it is distinguished by its intensely fresh and pleasantly persistent aroma, which carries all the richness of our Salento land.

Production Process

We carefully follow the entire production process, from cultivation to harvesting to bottling and storage. Our EVO oil is cold-pressed through state-of-the-art processes that preserve all its nutritional and organoleptic properties, making it a true elixir of well-being and taste.


Selection of olives

We handpick the best olives, ensuring that they are at the right stage of ripeness for optimal flavor and quality.


Traditional harvesting

Harvesting is done following traditional methods, respecting the'integrity of the olive and nature, to preserve its natural properties.


Controlled mulling

The olives are pressed using modern but gentle methods to extract the'oil while preserving all its organoleptic qualities.


Natural decanting

The'oil is allowed to rest, allowing the natural sediments to settle, thus ensuring the purity of the product.
